Treat Yourself Tuesday: Buffalo Jalapeño Poppers!
Who doesn't like buffalo wings and jalapeño poppers? These delicious snacks combine those flavors and are perfect for any gathering--a big sports game, movie night, or a dinner party. Or, just make them for yourself! (It IS Treat Yourself Tuesday, after all!) Beware: these are crazy addicting!
Ingredients
15 large jalapeños, halved
1 whole rotisserie chicken, shredded
1 cup Buffalo-style hot sauce
2 cloves garlic, minced
3 scallions, chopped
1 package cream cheese, softened
3 cups sharp cheddar cheese, shredded

Ingredients
15 large jalapeños, halved
1 whole rotisserie chicken, shredded
1 cup Buffalo-style hot sauce
2 cloves garlic, minced

1 package cream cheese, softened
3 cups sharp cheddar cheese, shredded
Directions
- Preheat the oven to 375°.
- Arrange the jalapeños in a large oven-safe casserole dish.
- Spray the jalapeños with a little cooking spray. Par-roast them for about 15 minutes.
- While the jalapeños are roasting, combine the shredded chicken and hot sauce in a small bowl. Season well with salt and pepper.
- In another small bowl, combine the softened cream cheese, garlic, scallions, and a little salt and pepper.
- Take the jalapeños out of the oven and let cool slightly to handle. Fill each jalapeño half with a good slather of the cream cheese mixture, topped with a spoonful of the saucy chicken.
- Rearrange the jalapeños in the casserole dish and cover liberally with the cheddar cheese.
- Roast for another 25-30 minutes, until brown and bubbly on top.
