Four Autumn-Inspired Vegetarian Slow Cooker Recipes

There are endless possibilities when it comes to slow cookers. Plus, you really can't beat how easy they are to use--just throw your ingredients in in the morning and forget about it! I love all kinds of dishes using the slow cooker, but for this post I'm focusing on easy vegetarian recipes for my best friend whom has recently gotten more interested in cooking. She requested some crock pot style recipes from me and I couldn't be happier to share!

For all of these recipes you just place all the ingredients in the slow cooker and cook on low for 8-10 hours or high for 4-6 hours. Let's get to it!


Slow Cooker Curry with Garbanzo Beans


As with all slow cooker recipes, this recipe is super versatile. I like chicken in my curry, so most of the time I'll add some to mine. But I must say, this is just as delicious without any meat whatsoever. If you don't have garbanzo beans, feel free to substitute lentils. Eat as is or serve over rice. Yum!

Ingredients


  • 1 onion, chopped
  • 1 carrot, chopped
  • 4 garlic cloves, minced
  • 1 russet potato, chopped
  • 1 green bell pepper, chopped (feel free to use red bell pepper instead if you prefer)
  • 2 cans garbanzo beans, drained
  • 1 can diced tomatoes
  • 1 tablespoon curry powder
  • 1 tablespoon turmeric
  • 1/2 tablespoon dried ginger
  • 1 teaspoon sugar
  • 1 teaspoon crushed red pepper flakes
  • 1 cup coconut milk
  • 1 can vegetable broth
  • salt and pepper


Slow Cooker Mushroom Stew


I love eating this with a big chunk of toasted, crusty bread for dipping.

Ingredients


  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 4 garlic cloves, minced
  • 2 containers white button mushrooms (of course you can use any kind of mushrooms you like)
  • 1 package enoki mushrooms (these are found at Asian supermarkets. If you can't find them, they aren't crucial)
  • 1/2 bunch kale, chopped
  • 3 cans vegetable broth
  • A few sprigs fresh thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried oregano
  • 1 bay leaf (discard before eating)
  • salt and pepper



Slow Cooker Black Bean & Sweet Potato Chili


Serve this topped with all the trimmings: green onion, sour cream, grated cheddar, cilantro and avocado. Winner!!

Ingredients


  • 1 onion, chopped (are you seeing a pattern here with the onions? haha)
  • 2 cloves garlic, minced
  • 1 bell pepper, any color, chopped
  • 2 cans black beans, drained
  • 1 can kidney beans, drained
  • 2 large sweet potatoes, chopped
  • 1 can diced tomatoes 
  • 1 can vegetable broth
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • pinch of sugar
  • salt and pepper



Slow Cooker Butternut Squash Soup


This soup is so comforting and cozy. If you like it extra creamy, you can blend it right before eating. Delicious topped with fresh chopped parsley, scallions, and feta cheese.

Ingredients

1 butternut squash, peeled, seeded, and chopped
1 onion, chopped
4 cloves garlic, minced
2 carrots, chopped
1 apple, chopped
2 cans vegetable broth
1 cup unsweetened almond milk (you could also use coconut milk)
1 teaspoon sage
pinch of nutmeg
salt and pepper
